Here, I thoroughly disagree. The scientific and philosophical mindset can be distilled to the very opposite idea.
Things can and are unknown, but with rational thought and experimentation, if a thing is real, it can be known.
I too grapple with the metaphysical. There are things and phenomena that we do not understand. I have experienced and seen things that do not have an easy rational explanation. This does not mean that such things cannot be known, only that presently they are not.
The more we learn, the less room there is for any overarching theology. A major reason for this is that all things can be known, if you can decipher how to ask the question. Humans are pretty good at that, and getting better.
